This Weight WatchersEasy Breakfast Casserole is really good, and who doesn't love some breakfast for dinner? I love Weight Watchers recipes that are filling and low in points!

BREAKFAST ANYTIME
I have always loved eating breakfast anytime for any meal. There is one kiddo in our house who doesn't like having breakfast for dinner, but she is forced to sometimes, LOL.
When you are getting bored with your meal plan on Weight Watchers, try switching it up and having breakfast for dinner. Many great breakfast recipes take too long to make in the morning before work.
I actually made this one night for dinner and then had the leftovers for breakfast later in the week. It warmed up nicely in the microwave. My family all liked this easy breakfast casserole. It is also very easy to modify for your family's tastes!
INGREDIENTS FOR WW EASY BREAKFAST CASSEROLE
This recipe doesn't have a ton of ingredients, and they should be easy to find at the store. I always have a lot of these basics on hand!
- Diced Tomatoes & Green Chilies
- Simply Potatoes Shredded Hash Browns
- Bisquick Pancake and Baking Mix, Heart Smart
- Egg
- Low-fat milk
- 100% liquid egg whites
- Diced ham
- Shredded cheese made with 2% milk
HOW TO MAKE AN EASY BREAKFAST CASSEROLE
I try to keep things simple in the kitchen. This Weight Watchers Easy Breakfast Casserole doesn't have a lot of difficult steps and doesn't dirty up many dishes either. Time is valuable!!
STEP ONE: PREPARE THE PAN
Start off by preheating the oven to 400 degrees F.
Spray a 9×13 pan with nonstick cooking spray.
STEP TWO: ADD HASH BROWNS
Spread fresh or thawed hash browns in the bottom of the pan and sprinkle with salt and pepper to your liking.
STEP THREE: ADD HAM & ROTEL
In a bowl, combine the ham and the drained can of diced tomatoes and green chilies. Mix this in with the hash browns in the pan.
STEP FOUR: ADD CHEESE
Sprinkle the cheese over this ham, tomato, and hash brown mixture.
STEP FIVE: MAKE EGG MIXTURE
In the empty bowl (I use the same bowl that I used for the ham), combine milk, Bisquick, egg, and egg white liquid and whisk together.
Pour this liquid over the top of the hash brown mixture.
STEP SIX: BAKE
Bake, uncovered for 40 minutes or until the knife inserted in the center comes out clean.
HOW TO GET EQUAL PORTIONS OF CASSEROLES
So I found an AMAZING product that helps with portion control on casseroles, desserts, etc. The pan has a grid on it and comes with a special tool to cut your food into exact portions. YES!

These are GAME CHANGERS to help keep you from failing at Weight Watchers due to eating extra points accidentally.
WW POINTS PER SERVING
I added up the points for all the ingredients listed above and divided that by 12. The casserole was cut into 12 portions.
I think 5 points for a nice-sized piece of casserole is pretty good!! This is five myWW Points per serving for Green, Blue, and Purple plans.
On the current WeightWatchers Program (2023) it is 5 points per serving.
