Lemon Blueberry Crumble Recipe - Cooking With Teens (2024)

I love baking – and it is the season for warm treats – so today we made a lemon blueberry crumble that turned out amazing. The crunchy crust with the warm blueberry mixture and brown sugar crumble on top with lemon zest was the perfect mixture of flavors. We also added some lemon juice to the crust and to the mixture to really bring out the flavor. This was really simple to make, and overall took about 15 minutes to put together and about 30 minutes of baking time. Great for breakfast or to have as a dessert. Some of the main ingredients were blueberries, Smucker’s® Fruit & Honey Fruit Spread, and fresh lemons.

To make the Lemon Blueberry Crumble:

CRUST

  • 2 cups all-purpose flour
  • 2 tablespoons white sugar
  • 2 teaspoons lemon juice
  • 1 pinch salt
  • 1/2 cup butter, chilled and diced
  • 1 large egg or 2 medium eggs
  • 1 teaspoon vanilla extract

To make the crust you will combine the dry ingredients (flour, sugar and salt) together in a blender on medium speed. Add the lemon juice and chilled diced butter and keep mixing. In a separate bowl, combine the egg and vanilla and then slowly add this into the flour mixture and let it blend until the mixture is like small crumbs. When it is ready, take the crust and press it into a greased dish, covering the bottom evenly. Put in the oven at 400 degrees and bake for about 10 minutes. Let cool slightly.

FILLING:

  • 2 cups fresh or frozen blueberries
  • 1/4 cup white sugar
  • 1 large spoonful of Smucker’s® Fruit & Honey Fruit Spread in Blueberry Lemon
  • 1/4 cup of brown sugar
  • 1/2 cup of softened butter

While the crust is baking you will make the filling and crumb topping. For the filling you will mix the blueberries with the white sugar and the fruit spread and mix and then add the brown sugar and butter and blend. When the crust is done baking and has cooled slightly, you will spread this evenly over the crust.

CRUMB TOPPING:

  • 5 tablespoons butter, softened
  • 1/2 cup packed brown sugar
  • 3/4 cup all-purpose flour
  • 1/4 cup confectioners’ sugar for dusting

After you have made the crust and spread the blueberry filling over the top, you will want to add the crumb topping before baking. Mix the softened butter with the brown sugar and flour and blend with your fingers to get little crumb balls. Sprinkle these evenly over the blueberry mixture before baking.

Put it back into the oven at 400 degrees and bake for about 20 to 25 minutes. Pull out and let it cool slightly before serving. Tastes amazing with ice cream, whip cream or just plain with some lemon zest on top. Sprinkle with the confectioners sugar before serving.
