Instant Pot Bolognese Sauce [Pressure Cooker] Recipe (1)

I love a good pasta sauce and this Instant Pot Bolognese sauce recipe has become of my go-to favorite recipes lately.

We do have a Slow Cooker Bolognese sauce that is also delicious, but I have been using my Instant Pot more and more and love how easy it is to make this sauce with pressure cooking.

What is bolognese?

Bolognese is a ground meat based sauce that comes from a place called Bologna, Italy, which is where it gets its name.

Traditional bolognese sauce is not the same thing as spaghetti or marinara sauce. Marinara is a tomato based sauce filled with herbs and occasionally vegetables.

Bolognese is a meat based sauce that has just a little bit of tomato for flavor – the meat is what this sauce is all about.

So if meaty sauce is your thing, then so is bolognese! Who doesn’t love a classic Italian meat sauce?

What kind of meat is used to make bolognese?

Classic bolognese sauce is traditionally made with minced beef or pork.

Today I am using a sweet turkey sausage, but Italian ground sausage is also delicious. You can also use ground beef, ground turkey, or ground pork.

Choose your favorite – they will all taste delicious in this dish.

Instant Pot Bolognese Sauce [Pressure Cooker] Recipe (2)

Ingredients needed for Instant Pot Bolognese:

  • 1 pound Italian sausage (I used turkey sausage)
  • 3 Tablespoons minced onion flakes
  • 4 teaspoons minced garlic
  • 1 (28 ounce) can crushed tomatoes
  • 1 (6 ounce) can tomato paste
  • 1 cup water
  • 2 Tablespoons sugar
  • 1 Tablespoon dried oregano
  • 1 Tablespoon dried basil
  • 1 teaspoon fennel seed
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

How to make Instant Pot Bolognese:

Step 1: Turn Instant Pot to sauté setting and add sausage when pot is hot.

Brown sausage and break up as it cooks (I used a Chop-Stir to break up my sausage).

Step 2: Add in other ingredients and mix until combined.

Step 3: Place lid on Instant Pot, move valve to “sealing” and press the “manual” button. Set timer for 20 minutes and let it do it’s magic!

It will take a few minutes to come to pressure, then it will start the countdown timer from 20 minutes.

Most bolognese recipes will simmer for many hours (our slow cooker recipe simmers for 8 hours!), but the Instant Pot will give you that all-day simmered flavor and texture in just 20 minutes.

That’s why I love this little kitchen appliance!!

Step 4: Once the 20 minutes of cook time are over, do a “quick release” by moving the valve on top to vent.

Once all the pressure has released and the pin has dropped, remove the lid and stir the sauce.

Enjoy!

What do I serve this bolognese sauce over?

Any kind of pasta will do!

This bolognese is a hearty meat sauce, so keep that in mind (you might want a thicker noodle to hold more of the sauce).

If you are watching your carbs, this sauce would also be delicious over zoodles (zucchini noodles) or spaghetti squash.

What Instant Pot do I use?

I have the Instant Pot LUX 6 Quart 6-in-1 Programmable Pressure Cooker. It’s basically 6 appliances in 1 – pressure cooker, rice cooker, saute, steamer, cake maker, and warmer.

If you are new to using your Instant Pot, I would highly recommend checking out these 3 easy recipes that you can make in your Instant Pot:

How to turn this into a freezer meal:

  • Cook the sausage and place in a resealable gallon-sized freezer bag or other freezer-safe container.
  • Add in the onion flakes, minced garlic, crushed tomatoes, tomato paste, sugar, oregano, basil, fennel seed, salt, and ground pepper into the bag. Let the bag cool down (if still hot from the cooked sausage). Place freezer bag into freezer and it will last up to 90 days.
  • When ready to use, dump ingredients from bag into Instant Pot (if it won’t come out, run the bag under hot water so that you can remove/peel off the frozen bag). Add 1 cup of water in with the frozen food. Place the lid on top, move the valve to SEALING, and press the MANUAL button. Set timer for 25 minutes. Do a QUICK RELEASE when the timer is done. Follow the rest of the instructions as written.

Once I scraped the bottom a bit more, I restarted it up and the issue was taken care of! It came out DELICIOUS! It will definitely be one of my go to's for sauce, talk about comfort food! Yummy!

  6. Shirley Park says:

I got the burn message, so I put sauce in another pot and scrubbed the pan. Returned sauce to Instant pot. Again I got the burn notice. Just finished cooking on stove top. It was delicious, but dont use the Instant pot to cook it!

  7. Tina says:

This sauce was DELICIOUS. I had to deglaze the pot before adding anything to the sausage so I used a splash of red wine. Otherwise, I followed this recipe exactly and I’ll be making this again. So good!

FAQs

Is tomato sauce enough liquid for Instant Pot? ›

In the case of this recipe, the tomatoes contain more than enough liquid to bring the pot to pressure because they will release their moisture as the pot heats up, without burning or sticking to the bottom. Be sure to closely follow the directions, though.

Why does bolognese sauce take so long to cook? ›

Traditionally, the sauce would simmer gently for hours, allowing the flavors to meld and intensify. This slow-cooking technique not only tenderizes the meats but also infuses the sauce with a depth and complexity that distinguishes it from other meat-based sauces.

Do you cover the pot when making Bolognese sauce? ›

Bolognese is an Italian pasta sauce made with ground pork and beef, an aromatic combo of celery, carrots, onion and garlic, cooked down with milk (which tenderizes the meat and adds a silky complexity). The mixture is then cooked, uncovered, with wine and tomatoes.

How do you keep spaghetti sauce from burning in the Instant Pot? ›

To prevent spaghetti sauce from burning in the Instant Pot, make sure you deglaze the pot by scraping the bottom with a spoon after sautéing the onions and garlic. This helps to remove any browned bits and prevents them from sticking and burning during pressure cooking.

How long does it take to can tomato sauce in a pressure cooker? ›

Do you add water to bolognese sauce? ›

Add tomatoes, then milk, and simmer for at least 2 hours on low heat. Keep it partially covered, but add water if too much liquid simmers away. Of course, you can skip the long slow cooking if you want, (we have a quick Bolognese recipe) but the flavor definitely improves with the longer cooking.

Does bolognese get better the longer you cook it? ›

Like most recipes the longer you leave it to slowly cook the better the flavour will be but this can also be knocked up with in an hour.

How long should I cook my bolognese? ›

How to make bolognese sauce more flavorful? ›

The best tip for intensifying the flavour of your sauce is just to cook it slowly on a low heat for a long time. This reduces the sauce and intensifies the flavours – four hours is not uncommon for my bolognese.

How to add richness to Bolognese? ›

Tomato paste gives a rich kick to a sauce, it is the result of tomatoes being cooked down for hours, so all the hard work has been done for you. Make sure you add a lot to the pan – like 1/3 of a cup – and cook it out for a few minutes before adding your mince. Add a pinch of sugar and this will reduce the acidity too.

Why does Instapot say food burns? ›

What Is Instant Pot's Burn Notice? Instant Pots have sensors that report when the temperature at the bottom of the pot is getting too hot. This feature is designed to prevent someone from opening the pot to a pile of scorched food.

How not to burn food in a pressure cooker? ›

If you are burning the bottom of your food, you should begin using a wire rack to hold the food off the bottom. You should also be using enough water that it does not run out of steam during the cooking cycle.

How do you keep spaghetti sauce from being too acidic? ›

Add Some Baking Soda

If your tomato sauce is too acidic and verging on bitter, turn to baking soda, not sugar. Yes, sugar might make the sauce taste better, but good old baking soda is an alkaline that will help balance the excess acid.

Can you use tomato sauce instead of water? ›

Cooking pasta in the sauce instead of in boiling water will increase the amount of time it takes to cook through. It's a good technique to use if you want to delay serving your pasta for a few minutes.

Do you need to add water to tomato sauce? ›

At this point, I normally like to add a bit of water (1/4 to 1/2 up) to the tomato can and swish it around to get all the tomato-y goodness, and pour that into the pot as well. This will thin the sauce a little and let it simmer longer without burning to the bottom of the pan.

Is it OK to pressure can tomato sauce? ›

Unripe tomatoes consist of a lot more acid as compared to fruit that has reached maturity. That is why it is recommended to make spaghetti sauce or preserve tomato-based sauces through the pressure canning method that requires no acid to be added to the sauce and ensures that the taste remains fresh even after days.

Does tomato sauce get thicker the longer you cook it? ›

Tomatoes naturally contain lots of water, so cooking any tomato sauce for a long period of time will help eliminate some of the water content. The water will slowly but surely evaporate, leaving behind a thickened, full-bodied sauce with lots of flavor.
