This Coconut Lime Energy Balls recipe has been on my mind for a year.
I made it on a whim before a day of family hiking last summer.
I never imagined these 4 Ingredient Coconut Lime Energy Bites would be so memorable. Yet 1 year later, I knew I had to make them again to share with you!
In prepping for any family adventure, I always prepare a lunch and snacks to tote along. Typical items that make the listareapples, baby carrots, sandwiches, crackers, something sweet, and plenty of water. On most occasions, the “sweet” aremy favorite homemade granola bars or my other favorite versionofenergy bites.

I try to make items that can get squashed in my husband’s backpack, but will still taste amazing. If granola bars get crushed, we have granola. If healthy energy balls get bent out of shape we have energy bars. We try to go with the flow during family adventures!
Bless my husband. He is the token pack horse on our hikes.
Heaven forbid I be asked to carry more than my lightweight Camelbak and phone. 😉
These little nuggets of deliciousness were one of the highlights of our day.
They radiated summer!
I don’t typically think of gluten free & dairy free energy bites as a refreshing and light treat, but these were just that. The bright flavors of the lime zest and juice paired with coconut were just heavenly on that hot day.
And with only fouringredients and no-bake time involved you have a quick and healthy treat to feed your family even if your day doesn’t consist of anadventure.

Ingredients Needed:
1 cup almonds
1 cup pitted and dried dates
1/2 cup shredded unsweetened coconut
1 lime, zested (1 Tbsp) and juiced (1 Tbsp + 1 tsp)
Step 1:
Add all ingredients to food processor.
Step 2:
Process on high until a crumbly and sticky mixture form. Take some mixture and see if it sticks together enough to forminto a ball. If it does, go ahead and form your bites. If not, add a little more lime juice or water to wet the mixture just enough to make it hold together.
Step 3:
You should end up with 20- 1″ bites to enjoy now or store in your fridge or freezer for later consumption.

- 1 cup almonds

These are amazing! I have people who are skeptical of flavors mixing like this, but everyone who tried it LOVES it! I found that they weren’t as sticky when I rolled them in coconut on the outside. So they’re much easier to package like that as opposed to being on their own. Great flavor! Making them for snacks consistently now!-

Oh, these are WONDERFUL! I’m always making energy bites for my boys, but I usually use deeper flavors like chocolate or pumpkin or something. The lime makes me super excited for these – I can already anticipate the “pop” of flavor it will add. Can’t wait to give these a try!

Omg these will be perfect! I work at a school daycare and I’m always on the go! I’m also attending meetings where there is a lot of junk food on the tables. I’m just wondering, how long could these be stored in the fridge and in the freezer?

Hi Jamie, I am not sure what container these bites would go in. I have not done the 21Day Fix program, but I do know that these bites are perfect for this diet because they only contain healthy whole foods and nothing processed. Happy snacking!

Hi Sammi, thanks for the suggestions but he’s allergic to all nuts, even pistachios! It’s so hard finding good/healthy snacks & recipes that don’t contain nuts. Most trail mix, granola and alike are off-limits for nut-allergy sufferers! 🙁 Thanks again though…..

Hi Erica, there are 72 calories, 9 grams carbs, 4 grams fat, and 6 grams of sugar in each bite. The recipe makes 20 bites. You do not need to be concerned with “white” items as there are no processed foods in this recipe, only whole foods. I hope your F-I-L enjoys these!
