Make these blended overnight oats for the perfect quick and easy breakfast! Creamy and smooth strawberry oats topped with a chocolate ganache layer, it's like eating dessert for breakfast.

Not only do these blended overnight oats taste like dessert, they also are packed with fiber, whole grains, and protein making them the perfect addition to your busy weekday mornings.

As you all know by now, I have a healthy (unhealthy) obsession with oats. Baked, overnight, cookies, oat flour- I love oats in any form. The newest oat form to join the family is- blended overnight oats. Now what is blended oats you might ask? Essentially it's overnight oats just blended into a smoother consistency. So you are still getting all the nutrients and flavour from your regular overnight oats it's just more fun (and also easier/ quicker- read below for why)!

If you were following along on my Instagram stories when I first made these I was a bit hesitant to try them. The smooth consistency seemed super weird to me. But I promise you, don't knock it until you try it. If you like strawberry and chocolate (and who doesn't) you will LOVE these.

Why would I want to blend my oats?

When I first heard of the concept of blended overnight oats that is currently trending on Tiktok I was quite honestly weirded out. It Don't get me wrong I love my high protein cheesecake overnight oats but why would I want to blend my perfectly good oats?

The answer to that question is: the texture. Apparently some people just don't like the texture of oats whether they are cooked or chilled. I am not personally one of those people but I'm not someone to pass up the opportunity to try new foods (especially oat variations).

By blending the overnight oats instead of a lumpy texture you get a nice smooth, almost batter-like consistency (similar to a thick smoothie bowl) and honestly I loved them. It was like eating cake batter for breakfast (and who doesn't want to do that?). I really think these might be a new staple in my morning breakfast rotation. They are the perfect oatmeal recipe for anyone who doesn't like oats!

Do I have to leave these oats overnight?

The other reason that blended overnight oats may be superior to normal overnight oats is the fact that you don't technically need to let them sit overnight. So they are PERFECT for last minute breakfasts.

Since all you are really doing is making an oatmeal smoothie you don't technically need to leave these overnight. I would recommend putting these in the freezer for at least 20 minutes if you can because if not your oats will be room temperature and that's just not appetizing to me.

Another thing to note is that if you are choosing to forego the overnight option your ganache will not be set. This is fine it just means you will have a more liquidy chocolate swirl throughout once you stir them!

What ingredients do I need for these blended overnight oats?

Oats- duh! you can’t make blended overnight oats without oats! I like to use minute oats but really any type of rolled or quick oats will work!

Chia seeds- Chia seeds are a natural binder so by adding a tablespoon into your oats they help keep everything together while giving you some healthy fats to help complete your nourishing breakfast! You can find the ones I use here!

Milk- Choose your milk of choice. This just helps everything blend together.

Protein Powder- I like to add a little scoop of my favourite protein into all my oatmeal recipes. I find it is an easy way to help keep me full for a little longer during the day (and it adds a little extra sweetness). If you aren’t a protein powder fan, feel free to leave this out- just follow the substitution directions at the bottom of the recipe!

Strawberries- You can't have chocolate covered strawberry oats without strawberries! Either frozen and fresh strawberries will work, the choice is yours.

Beetroot powder- For a beautiful all natural pink colour! I actually used my favourite beetroot latte mix from Blume because I had it available. Or- you can completely just omit this it doesn't alter the taste at all its just for prettiness!

Thick Yogurt- Any thick yogurt will work fine for this. The purpose of the yogurt is really just to ensure the oats aren't too liquidy and more of a thicker consistency! I personally use plain Greek yogurt. Skyr would also work perfectly! I have not tested this with any non-dairy yogurts however I'm sure it would work they just may not have the same “cheesecake” consistency.

Chocolate Chips- For the chocolate ganache! The chocolate topping is really optional if you just want strawberry blended oats but chocolate makes everything better in my opinion!

Chocolate Covered Strawberry Blended Overnight Oats

Ingredients

Base

  • ½ cup oats quick, minute or rolled all work
  • 2 tablespoon vanilla protein powder optional, see notes for substitutions
  • ½ tbsp chia seeds
  • ¼ cup strawberries fresh or frozen both work
  • 1 teaspoon beetroot powder (optional- for the bright pink colour)
  • ¼ cup thick yogurt ie. greek yogurt
  • cup milk of choice

Chocolate Ganache

  • 1 tablespoon chocolate chips melted
  • 3-4 tablespoon milk

Instructions

  • In a blender, combine all base ingredients and blend until smooth. Pour into a mason jar, or container.

  • In a small bowl, stir together melted chocolate and milk until a smooth liquid forms. Pour chocolate ganache over-top of the oat base. Cover and place in the fridge for at least 2-3 hours or overnight.

  • In the morning, top with additional strawberries and enjoy!

Notes

*If you do not wish to use protein powder, substitute with an additional 2 tablespoon of oats and 1 teaspoon of honey or maple syrup (for sweetness)
