Can I substitute King Arthur Gluten Free Flour for Regular Flour?

Yes, but it's important to use their Measure for Measure Gluten Free Flour. It's formulated to be a perfect swap for regular flour in your favorite baked goods.

It includes xanthan gum, a stabilizer that provides structure for gluten-free baked goods. It helps create a texture that's soft and light, instead of crumbly and grainy.

Don't swap it in for regular yeast-based recipes like yeast-risen breads or donuts. It's important to find gluten-free formulated recipes for yeast-risen breads and treats!

What is the trick to baking with gluten free flour?

While there's not one simple trick to cure all your gluten-free baking woes, there are a few that help a ton!

  • Start with a good quality gluten-free all-purpose flour that includes xanthan gum. Gluten-free all-purpose flour blends are a mixture of alternative flours and starches. Each brand reacts differently in recipes, and tastes different too! I highly recommend Bob's Red Mill's 1:1 Gluten Free Baking Flour or King Arthur's Measure for Measure Gluten Free Flour.
  • Look for recipes that call specifically for the brand of gluten-free flour you're using. This way if the recipe doesn't come out right, you know it was the recipe and not the flour you used.
  • Certain brands swap better than others. For example, I've found Bob's Red Mill and King Arthur to swap for each other well in recipes. But Cup4Cup and Bob's Red Mill don't swap well. For this reason, it's best to find a recipe specifying the brand of flour they used.
  • Do not swap one-ingredient alternative flours for gluten-free all-purpose flour blends. For example, if a recipe calls for gluten-free all-purpose flour, do NOT swap in almond flour or coconut flour. They're not a 1:1 substitute and the recipe won't come out right. Instead look for a recipe that calls for almond flour.

What is the secret of baking with gluten-free flour? ›

Is King Arthur gluten-free flour good for baking? ›

How to bake with it: Swap this flour 1:1 into any recipe that calls for all-purpose flour to make it gluten-free. It's ideal for non-yeasted recipes like cookies, brownies, and cakes.

Can gluten-free flour be substituted for all-purpose flour? ›

If the original recipe calls for 260 grams of all-purpose flour, substitute with 260 grams of your blend. Beat the batter more. Because gluten-free flours provide less structure than all-purpose, the batter or dough you make with them may require more beating than that which you are accustomed.

What does cream of tartar do in gluten-free baking? ›

A: Yes, cream of tartar can be used in gluten-free bread recipes to improve dough stability and rise.

Why is it challenging to bake with gluten-free flours? ›

Gluten-free flours often contain fine starches, so they absorb more liquid than conventional flour. To address this, gluten-free recipes usually call for more liquid and produce looser batters. They may also call for a larger quantity of leavening, like baking powder, to help add volume and lighten the texture.

How to make gluten-free flour taste better? ›

Flavor. New bakers should try adding extra vanilla and/or spices to recipes. Gluten-free flours often have unique tastes, and adding additional flavoring to recipes will help cover up these unfamiliar flavors.

Brown rice flour is about as close to a 1:1 substitute for all-purpose flour as it gets since it provides structure and a “wheat-like” flavor.

Do I need to add xanthan gum to gluten-free flour? ›

Xanthan Gum adds thickness and viscosity to gluten-free breads and other baked goods. Without xanthan gum, your gluten-free baked goods would be dry, crumbly and flat. Because xanthan gum is gluten-free and vegan, it's the preferred thickener for those home bakers with food allergies.

Which gluten-free flour is best for cookies? ›

What's the best gluten-free flour for baking? Bob's Red Mill gluten-free 1-to-1 baking mix is my favorite gluten-free all-purpose flour blend for baking. Extra Leavening:

Sometimes you may find that adding a bit more baking powder will help, when converting a recipe to gluten free. So, if a muffin recipe calls for 1 teaspoon baking powder, for example, I'd go ahead and add 1/2 – 1 teaspoon extra. Take good notes so you know what did when you go to make the recipe again!
